Swedish "Kladdkaka" / Gooey Brownie Recipe

I don't normally add icing, but these were for the school Halloween party.

I've had a few requests for my Chocolate Brownie recipe so I thought I'd share it with you guys on here. The recipe is for a Swedish Kladdkaka (Messy/Gooey cake) and is a popular cake in most homes. My one has been passed down by my Great Grandmother, Essie, and to me it brings back a lot of childhood memories, my mum served it as dessert at dinner parties often and I've yet to see anyone turn their nose up at it. I still make it as a cake but it goes down so well in our house and is so easy to make (I know it off by heart now) that I have started making a double batch to bake brownies. It's sugary, chocolatey and so so gooey it's dangerous to have sitting about the house, well at least it is if your self control is anything like mine!

Below is is the recipe for my Gran's cake for which I use a round 23 cm (9 inch) pie dish, the cake is quite thin but full of flavour; it's ideal served with some vanilla ice cream, whipped cream or extra thick double cream at the end of a meal. I also have a few ingredients I have added myself to try to improve on the recipe. I have highlighted them as they aren't necessary (it's still DELICIOUS without them) but you can add them if you like. I bake it in a fan assisted oven at about 170° celsius for about 15-20 minutes, do the stick test in the middle to double check that it has cooked through.

Edit: I made my usual cake last night but felt like throwing in some desiccated coconut - BEST IDEA EVER! The cake is even chewier than usual and the coconut flavour with the chocolate is divine, I ate the best part of half a cake myself last night, there definitely won't be any left tonight!

Ingredients
  • 2 eggs
  • 300 ml sugar
  • 150 ml flour
  • 100 g butter (melted)
  • 4-5 tbs cocoa powder
  • 1 tps vanilla sugar (or extract)
  • 0.5 tps salt
  • 1 tps baking powder
  • 50 ml baking syrup
  • 100 ml (approx.) desiccated coconut


Method
  1. Mix the eggs and sugar well, I like to make sure it seems fairly fluffy.
  2. Mix the cocoa powder, flour, vanilla sugar and salt (plus optional baking powder).
  3. Add the dry mix to the egg and sugar bowl and mix well.
  4. Stir in the melted butter (and baking syrup if you're opting for the unhealthier option).
  5. Pour the mix into the tray and pop it into the oven.
  6. Lick the utensils clean while you wait.


To make the brownies, as I've already mentioned, I just make a double batch of the mix and then I use a rectangular tray measuring 23x30 cm (9x12 inches) and bake it for approximately 25 minutes but it can need an extra couple so again make sure to do regular stick tests towards the end. I like to cut them into little bite sized chunks so I can sneak bites without the kids noticing 😉.

Succulent Carrot Cake

The last few days I've been craving a slice of carrot cake because it's one of my favourite cakes. I used to hate it as a child, I think mostly because it had a vegetable in it to be perfectly honest. However, I have also tasted some pretty awful carrot cakes, often they're dry and sometimes full of nuts and dried fruit. Toddler tantrum: Poo-gate

Some toddler tantrums are so bad I'd rather shoot myself in the foot than deal with them, but a lot of them are just laughable. To be fair they get worse as they get older so I will no doubt not find my son's outbursts as funny in a year's time.
